1 env. active dry yeast 3⁄4 c. water 3-1⁄2 c. biscuit baking mix, divided 1 T. sugar 1/4 c. butter, melted Garnish: additional melted butter
Dissolve yeast in warm water (110 to 115 degrees); let stand 5 minutes.
Place 2-1⁄2 cups biscuit mix in a large bowl; stir in sugar. Add yeast
mixture, stirring vigorously. Sprinkle work surface generously with
remaining biscuit mix. Place dough on surface and knead 15 to
20 times. Shape heaping tablespoons of dough into balls; arrange on
a lightly greased baking sheet. Cover dough with a damp tea towel;
set aside in a warm place to rise, about one hour. Brush rolls with
melted butter. Bake at 400 degrees for 12 to 15 minutes or until golden.
Remove rolls from oven; brush again with melted butter while hot.
Makes 15 rolls.
