2 c. cooked chicken, chopped
3 eggs, beaten
3/4 c. evaporated milk
6-oz. pkg. cornbread stuffing mix
1/2 c. mild salsa
Garnish: cherry tomatoes or jalapeno slices
Combine all ingredients together in a large mixing bowl. Blend well. Fill greased muffin cups or ramekins 2/3 full. Bake at 350 degrees for 20 to 25 minutes, or until golden. Garnish tops as desired. Makes 8 regular or 4 jumbo muffins.
